Dear Peanut and Munchkin,
I am very thankful that your Daddy and Lola were able to take care of you today so I could go to the Healthy Food, Happy Wallet Conference. I really want to be able to feed you as much healthy food as I can, but the healthier foods are often the most expensive. I don’t have a lot of time to spend cooking, either, though I know the best way to eat healthy is to prepare your own food. I learned a lot of excellent information from the women who were presenting today, and received some free items and coupons. There are far too many good ideas for me to implement everything right away, so here are three things I want to accomplish in the next three months:
1. Thin out and organize the basement to make room for an organized stockpile. I’ve been wanting to do this since we moved into the house 5 years ago!
2. Find a CSA or co-op where we can get organic or at least pesticide-free produce and possibly organic-fed, antibiotic-free and hormone-free animal products.
3. Create a system to plan weekly menus based on the fresh items we get from the CSA or co-op, and make an attempt at doing at least some of the prep work ahead of time.
These things will require time to set up at the outset, but hopefully will save time – and money! – once we get rolling. And I’m going to try to find ways you can help, so we can spend more quality time together, too!
